  3. Cuisson de l'Echalotte 1/2 : Dans une Poêle sur feu doux mettre faire fondre le BEURRE - Ajouter les Échalotes et les Faire Dorer - Ajouter les 300ml de VIN BLANC et faire mijoter pour réduire le VIN de moitié
  4. Cuisson de l'Echalotte 2/2 : Ajouter les 200ml de CREME puis mélanger - A réebulition ajouter les FEUILLES d'OSEILLE, mélanger et faire cuire 5 minutes
  5. Mixage : Verser dsns un pot le mélange de la Poêle - SALER, POIVRER, ajouter le JUS DE CITRON VERT et les 20 D'ÉPINARDS CUITS et hacher au Mixeur Plongeant jusqu'à homogénéisation - Remettre le Mélange dans un Poêle sur feu doux pour réépaissir
  6. Dressage - Conservation : Verser tout de suite le mélange sur du SAUMON cuit, Conserver dans des Petits Pots au Réfrigérateur en plaçant la SAUCE chaude dans le Pot, en serrant le Couvercle, puis en retournant le Pot à l'envers le temps qu'il refroidisse
